HARIRA WITH CHICKEN AND CARROTS |

INGREDIENTS:
• 200g chicken wings and giblets
• 2 carrots, diced
• 50g lentils
•1 chopped onion
• 4 grated tomatoes
• 1 small bunch parsley, chopped
• 1 small bunch coriander, chopped
• 3 stalks celery, chopped
• 1 tsp pepper
• 1 tsp ground ginger
• 1 tsp salt
• 1 tsp smen
• 2 cinnamon sticks
• 2l water
• 2 tbsp tomato paste
• 50g rice
FOR THE TEDOUIRA:
• 150g flour
• juice of ½ lemon
• 2 cups water
TO GARNISH:
• 1 tbsp chopped coriander.

TO MAKE THE TEDOUIRA: In a bowl, mix the flour with the water and lemon
juice. Blend to obtain a smooth batter. Cover and set aside to rest
overnight in a warm place. Beat the tedouira before using, adding a
little more water to make it runnier if necessary.
